Raspberry Almond Phyllo Stacks

Seriously, a dessert does not get any easier than this… there are many, many variations depending on taste.  The basics are butter & jam and perhaps a hint of almond or vanilla.

Raspberry Almond Phyllo Stacks

  • 20 sheets phyllo dough
  • 1/2 cup melted butter
  • 1/2 cup honey
  • 1 teaspoon almond extract
  • 1/2 cup raspberry jam

Mix butter with almond extract.  Brush 7 sheets of phyllo with butter mixture, one at a time.  Place in an ovenproof dish.  Spread 1/4 cup of the jam over the 7 sheets and drizzle with about 1/3 of the honey.  Brush another 7 sheets and repeat layering process.  Finish with the final 6 sheets and drizzle with any remaining butter and honey.  Slice/score into desired squares, diamonds or triangles (phyllo is easier to cut/score when uncooked).  Bake at 400º 15-20 minutes or until golden brown.
